In Peru, Teresa Izquierdo is a legend.

A cook's daughter, this Afro-Peruvian chef has attained great acclaim as one of the chief proponents of traditional coastal criollo cuisine.

Her restaurant in the the working-class neighborhood of Lince is not the most glamorous in the Peruvian capital, but the food is always classic, and consistently good.
