Cebiche de Lenguado

A classic ceviche, made with sole, and accompanied by mote(boiled corn kernels), and camote (boiled sweet potato). The sauce for the cebiche is made with onions, lemon, and topped with rocoto, one of Peru's ubiquitous hot peppers.

Ceviche made with mero is excellent too - especially in Mancora and neighboring areas.
