Taste Number 27: Peruvian Food
The brief note is another paean to Chef Gastón Acurio, his Astrid y Gaston Restaurant (Lima, Santiago, Bogotá, Quito, Caracas), and his Cebichería La Mar (Lima, Mexico City, and soon: Panama City, Washington D.C., and Madrid).
The author of the item recommends: ají-marinated octopus (which she calls, 'a riff on a Peruvian street-food staple'), and the tuna ceviche with tamarind leche de tigre, made with ají, Peruvian limes, red onion and cilantro.
Don't let 2007 pass you by without sampling some of these great Peruvian food specialites.
